Nasi Goreng

Ingredients
- 2 red Thai chiles , stemmed
- 2-3 large shallots , peeled
- 2 large garlic cloves , peeled
- 1 tbsp dark brown sugar
- 1 tbsp molasses
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- Salt
- 2 large eggs
- Vegetable oil
- 1 1/2 - 2 cups basmati rice (cook for more)
- 1 1/2 - 2 cups frozen vegetables (carrots, beans, peas, and corn is a good mix)
- 1 1/2 - 2 cups protein of a sort-- cooked chicken, pork, shrimp, etc.
- 4 large scallions , sliced thin
- 2 limes , cut into wedges
Preparation
- Emulsion blender for chilies, shallots, garlic, brown sugar, molasses, soy sauce, fish sauce, and pinch of salt. Blend into smooth sauce.
- Get 2 tbsp of oil hot in a wok. Add a finely chopped shallot, then some of the blended sauce.
- Work rice, veg, and protein into the wok in batches.
- Add in more blended sauce and oil as needed.
- Add fried onions or finely sliced scallions to dish before topping with finely cut omlette.
- Serve with sambals (badjak and manis are good).
