Ingredients

  • 2 red Thai chiles , stemmed
  • 2-3 large shallots , peeled
  • 2 large garlic cloves , peeled
  • 1 tbsp dark brown sugar
  • 1 tbsp molasses
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • Salt
  • 2 large eggs
  • Vegetable oil
  • 1 1/2 - 2 cups basmati rice (cook for more)
  • 1 1/2 - 2 cups frozen vegetables (carrots, beans, peas, and corn is a good mix)
  • 1 1/2 - 2 cups protein of a sort-- cooked chicken, pork, shrimp, etc.
  • 4 large scallions , sliced thin
  • 2 limes , cut into wedges

Preparation

  • Emulsion blender for chilies, shallots, garlic, brown sugar, molasses, soy sauce, fish sauce, and pinch of salt. Blend into smooth sauce.
  • Get 2 tbsp of oil hot in a wok. Add a finely chopped shallot, then some of the blended sauce.
  • Work rice, veg, and protein into the wok in batches.
  • Add in more blended sauce and oil as needed.
  • Add fried onions or finely sliced scallions to dish before topping with finely cut omlette.
  • Serve with sambals (badjak and manis are good).
